What is Tocino?
In the Philippines, tocino often refers to sweetened pork traditionally served for breakfast. The pork is prepared by marinating with salt and sugar. To give it some tartness, pineapple juice is added by modern cooks.
Traditionally, saltpeter has been used as an ingredient in making tocino. The front of this product’s label prominently states: “Walang Salitre” (No Saltpeter)
