Standard Tagalog-English dictionaries will describe tunsóy as a fimbriated sardine with the scientific name Sardinella fimbriata. (Fimbriated means it has a fringe or border of hairlike or fingerlike projections.)
Many different species of fish, however, have been referred to as tunsóy in the Philippines.
It’s more often translated into English as “herring” rather than sardine.
This fish is marketed fresh, dried-salted, boiled or made into fish balls. It is also exported to other countries.
