Tamarind is arguably the most popular souring agent used in the widely eaten Filipino dish sinigang. The tree’s leaves are also used for such stews.
The tamarind fruit is also candied. Coated with salt, sugar or a combination, this widely enjoyed “tamarind candy” is simply called sampalok, as well.
