RECIPE: Embutido (Filipino Meatloaf)

Also spelled as embotido in the Philippines, the name of this Filipino-style meatloaf is from the Spanish word embutido, meaning ‘sausage.’

INGREDIENTS FOR MAKING EMBUTIDO

1/2 kg ground pork
3/4 cup ham or leftover luncheon meats, chopped finely
1/2 cup chorizo de Bilbao, chopped finely
2 eggs, lightly beaten
1/2 cup onions, chopped finely
1 small box of raisins
3 tbsp sweet pickle relish
2 tbsp of ketchup
1/4 cup grated cheddar cheese
2 tbsp cornstarch
salt and pepper to taste
2 hard-boiled eggs (quartered lengthwise)

HOW TO MAKE EMBUTIDO

1. Mix all the ingredients except for the hard-boiled eggs.
2. Divide into portions and shape them into logs, each about 3 inches in diameter.
3. Insert the hardboiled eggs in the center of each log.
4. Wrap in aluminum foil and place in a baking pan.
5. Bake at 350 degrees for 40 minutes.
6. Remove the foil and then return to the oven to bake for another 30 minutes or until the surface browns nicely.
