LONGANISA

Longanisa and langonisa are misspellings of the Filipino word longganisa, which came from the Spanish longaniza. (Think of the Portuguese linguiça.)

Following the rules of Tagalog orthography, this word is properly spelled as longganisa, and not longanisa.

Longganisa is traditionally the term for pork sausage. It is now sometimes translated into English as “Philippine sweet sausage.”


Recipe in Tagalog for Longganisang Pilipino

1 kilong karne
1/2 kilong taba
2 utong bawang, ginayat nang pino
1 kutsaritang paminton
1/2 kutsaritang pulbos na paminta

Gilingin ang karne pati ang taba nang maliliit. Pagsamasamahin ang lahat at bayaang gayon sa loob ng maghapon. Pagkatapos ay ilagay sa tuyong bituka ng baboy o kaya’y baka. Talian ang magkabilang dulo upang huwag matapon ang laman. Isabit sa lugal na mahahanginan upang matuyo.
