Kaldereta is a dish of meat and tomato sauce. Traditionally, goat meat (karne ng kambing) is used but these days it is often made with beef, sometimes pork or chicken. In certain provinces of the Philippines, large potato cubes are a necessary ingredient in kaldereta.
