ESTOPADO

Estofado is a Filipino method of cooking based on Spanish influences. It involves braising or stewing for 30 minutes, usually meat like beef or pork knuckles. Sugar, garlic, soy sauce and a bay leaf are among the other ingredients added into the pot.

The most common ingredient used in Filipino estofado is ox tongue. It is called Lengua Estofado and this dish is a favorite served during big family gatherings.


Lengua is the Spanish word for ‘tongue.’

Estopadong Dila ng Baka

Kaskasin at linising mabuti ang dila ng baka. Maglagay ng suka at tubig sa isang lutuan. Lagyan ng asin, sibuyas, kapirasong kanela, dalawang dahong laurel at isang kutsaritang matamis. Takpang mabuti. Bayaang kumulo hanggang tumiim ang sabaw at lumapot. Magtunaw sa mantika ng isang kutsarang asin. Pigaan ng kalamansi, pula ng itlog at paminta na siyang gawing salsa sa dilang paghihiwahiwain.
