DINENGDENG

Dinengdeng is a vegetable stew from the Ilocos region of the Philippines.

The main seasoning in this dish is bagoong (a paste of fermented fish or shrimp) along with rice washings. Leftover fish or unshelled shrimps are often added to be the focus ingredient.

Aside from okra and malunggay pods, the following vegetables are among those commonly used in dinengdeng:

ampalaya
bittermelon

talong
eggplant

kalabasa
squash

sitaw
string beans

kamatis
tomatoes

bulaklak ng kalabasa
flowers  of the squash plant

Also called inabraw by the Ilocanos.

What distinguishes dinengdeng from the Filipino vegetable dish bulanglang is the addition of a fried fish.
